This 2016 GSM is bright mulberry red with some scarlet hues that entice you into the delightful sweet spice aroma’s intertwined wirh bright cranberry underlying these flavours are black liquorice and cardamom pods. Once in your mouth you will be spoilt with Blueberry and ripe strawberry fruit which swirls around the creamy mid-palate and floats above the dusty and fine tannin structure. The fruit is carried by a purity of acid and highlights the spiced and toasted notes from the oak integration.

Description

TASTING NOTE

This 2016 GSM is bright mulberry red with some scarlet hues that entice you into the delightful sweet spice aroma’s intertwined with bright cranberry underlying these flavours are black liquorice and cardamom pods. Once in your mouth you will be spoilt with Blueberry and ripe strawberry fruit which swirls around the creamy mid-palate and floats above the dusty and fine tannin structure. The fruit is carried by a purity of acid and highlights the spiced and toasted notes from the oak integration.

WINEMAKING

Made from fruit sourced predominately from the Southern end of the Barossa Valley that leads to more spice in the final wines. All three varieties were fermented and matured separately before careful melding took place before bottling. Fermentation occurred old rustic concrete open top fermenters with heading down boards to provide soft tannin extraction. The parcels were fermented in French oak for 15 months with approximately 15% new oak.
