Aramis 2013 Black Label Chardonnay (notes currently for 2012 vintage)
This is a Chardonnay that whispers rather than shouts – it’s fresh, textural mouth feel from partial barrel fermentation is delicately balanced by bright apple and citrus flavours and a lingering steely minerality. Give it a moment and its subtle cashew and lifted floral notes emerge, adding layers of depth and complexity to the wine. Effortlessly stylish and tantalisingly restrained – a modern rendition of a classic varietal.
Our passion for pure, elegant Chardonnay has led us towards the cooler climate of the Adelaide Hills, where we have been able to track down a parcel of beautifully expressive hand-picked fruit from the Woodside area.
The fruit was hand-picked early in the morning when the vineyards were at their coolest, and then whole bunch pressed. The juice was run to a combination of stainless steel tank (60%) and old French oak barrels (40%). Natural (wild) fermentation was carried out in both tank and barrel and the wine was then left on its lees until the end of the year, when
the wine was bottled.
2012 was a complete contrast to 2011 and about as close to perfect for Chardonnay as it is possible to get. Moderate temperatures throughout the growing season provided near perfect ripening conditions, and allowed for a perfect balance of fruit concentration and elegance.
