Aromas of blackcurrant and blackberry, charred capsicum, roast chestnut and Eucalypt. On the palate you’re met with upfront dark fruit, tobacco leaf, toasty savoury spice and wild sage. The nish is savoury and earthy with moreish grainy tannins, a signature McLaren Vale Cabernet.
Conditions in the spring of 2015 were very dry, yet there was impressive vine growth, some old hands saying they had never seen the vineyards looking so good! Above average temperatures in October and December led to predictions of a very early, swift vintage. Ripening, however, slowed in January. 60-70 mm rain fell, followed by an unusually cool February average of 19.5°C. Gentle ripening continued and picking was slow paced and orderly. The resulting wines are excellent; colour is vibrant, aromatics are alluring and the natural balance and mouthfeel is superb.
Songbird Cabernet Sauvignon is produced from Estate Grown fruit and combines freshness and aromatic lift with classic Cabernet structure. Songbird refers to the huge range of birds that we have in the Coriole gardens, vineyards and native scrub lands.
A new name and image that suits this regal yet pretty wine. Predominantly from the Estate vineyards with about 25% of softer material coming from Blewitt Springs. A great example of what McLaren Vale can do with the often under rated Cabernet Sauvignon. Open fermented in 3-4T batches, gentle hand plunging gives subtle extraction of the classic Cabernet tannins and structure. An approachable wine that will still reward the connoisseur.

This wine would go brilliantly with an Argentinian grill or a BBQ with smoky spicy chorizo, eggplant and capsicum.
